  • 8 oz cooked chicken breast
  • 2 1/2 cups cauliflower florets
  • 1 carrot, chopped
  • 1 1/2 tbsp grated ginger
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp dried mint
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a pot over medium heat. Add onion, garlic, turmeric, and black pepper; sauté for 2-3 minutes.
  2. Add cauliflower and 2 cups of chicken broth (or water). Cover and cook for about 7 minutes until the cauliflower is tender.
  3. Stir in grated ginger, dried mint, and chopped carrot; cook for another 5 minutes. Blend the soup halfway using an immersion blender to thicken it.
  4. Fold in the cooked chicken and season with salt and additional black pepper if needed. If too thick, add more broth or water. Simmer for another 5-6 minutes before serving.
