  • 1 lb large raw shrimp (peeled and deveined)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 8 oz coleslaw mix
  • 10 flour tortillas
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • Kosher salt & black pepper
  • Cooking spray
  • ¼ cup chopped cilantro
  • ¼ cup chopped green onion
  • Juice from ½ lime
  • Squirt of sriracha
  • Chopped green onion for garnish

Instructions

  1. Pat the shrimp dry. Set up your dredging station with three shallow bowls: one with tapioca flour mixed with paprika and garlic powder, one with whisked eggs, and one with panko breadcrumbs.
  2. Coat each shrimp in the tapioca flour mixture, dip into the egg wash, then coat thoroughly in breadcrumbs.
  3. Place coated shrimp in the air fryer basket and spray lightly with cooking oil. Air fry at 390°F for about 7 minutes, flipping halfway through.
  4. While the shrimp cooks, prepare the bang bang sauce by mixing mayonnaise, Thai sweet chili sauce, and sriracha until smooth. Toss coleslaw mix with lime juice and chopped cilantro.
  5. Warm tortillas as desired. Assemble tacos by layering slaw and crispy shrimp on each tortilla. Drizzle with remaining bang bang sauce and garnish with green onions.
