Juicy chicken breasts are layered with a creamy, herbed ricotta cheese filling, then baked to golden perfection. This easy, protein-packed dish is perfect for weeknights yet elegant enough for guests!

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • Salt & pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • In a bowl, mix ricotta, Parmesan, garlic powder, herbs, salt, and pepper.

  • Slice each chicken breast horizontally to create a pocket.

  • Stuff with ricotta mixture, then secure with toothpicks if needed.

  • Place in a greased baking dish, drizzle with olive oil.

  • Bake for 25–30 minutes, or until chicken is fully cooked.

  • Garnish with parsley and serve hot.

Notes

  • Add spinach or sun-dried tomatoes to the ricotta for extra flavor.

  • Use a meat thermometer—internal temp should reach 165°F (74°C).

  • Leftovers store well in the fridge for up to 3 days.
