  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Slice chicken breasts in half to create thin fillets; season with salt and pepper.
  3. In a bowl, mix cream cheese and heavy cream until smooth; add garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half the mozzarella.
  4. Spread the mixture over the chicken fillets in a baking dish; top with sun-dried tomatoes.
  5. Bake covered for 20 minutes; remove cover and stir in chopped spinach and remaining mozzarella.
  6. Bake uncovered for another 10 minutes or until bubbly and golden.
