  • 1/2 cup unsalted butter, browned
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup finely grated carrot (about 23 medium carrots)
  • 1/3 cup shredded sweetened coconut
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, chilled
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream

Instructions

  1. Brown the unsalted butter in a saucepan over medium heat until golden and nutty.
  2. In a large bowl, mix the browned butter with granulated and brown sugars. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually combine with wet ingredients.
  4. Fold in grated carrots and shredded coconut until well mixed.
  5. Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions onto parchment-lined baking sheets and bake for about 10 minutes or until lightly golden.
  6. For the filling, beat softened butter and chilled cream cheese until smooth; gradually add powdered sugar and mix until creamy.
  7. Once cookies cool completely, spread cream cheese filling on one cookie half and top with another to create a sandwich.
