  • 1½ cups semi-sweet chocolate chips
  • 2 cups mini vegan marshmallows
  • 1 tablespoon unsalted butter
  • 1 tablespoon barley tea
  • 25 wrapped caramels (unwrapped)

Instructions

  1. Line an 8×8 inch pan with parchment paper for easy removal.
  2. Melt semi-sweet chocolate chips in the microwave until smooth, then pour half into the lined pan. Freeze for 15 minutes.
  3. Combine vegan marshmallows and butter in a bowl, heat until melted and smooth, adding barley tea for flavor. Spread evenly over the chilled chocolate layer.
  4. Freeze again for 15 minutes until set.
  5. Melt unwrapped caramels and pour over the marshmallow layer, spreading quickly before it sets. Freeze for another 15 minutes.
  6. Top with remaining melted chocolate and freeze until fully set (15-30 minutes).
  7. Cut into pieces and enjoy!
