  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in a greased round baking dish and drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices and top with the rest of the balsamic mixture.
  5. Cover with foil and bake for 45 minutes.
  6. If using cheese, sprinkle grated Parmesan on top and bake uncovered for an additional 15-20 minutes until golden brown.
  7. Allow to cool slightly before slicing and serving.
