  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 14.5 oz can diced tomatoes
  • 2 cups beef broth
  • Corn tortillas
  • Oil for frying

Instructions

  1. Soak dried guajillo and ancho chilies in hot water for 15 minutes. Blend with onion, garlic, and diced tomatoes until smooth.
  2. Place beef chuck roast in the crock pot and pour the blended chili mixture over it. Add beef broth and seasonings (vinegar, oregano, cumin, bay leaves, salt, pepper).
  3. Set the crock pot on low heat and cook for 8-10 hours until beef is tender.
  4. Shred the beef with two forks and mix it back into the sauce.
  5. Fry corn tortillas in oil until crispy, dip briefly in broth fat if desired.
  6. Fill tortillas with shredded beef mixture, fold gently, and serve hot with optional garnishes.
