  • 8 to 12 large mushrooms
  • 1 (6-ounce) can of minced clams, drained
  • 1 beaten egg
  • ½ cup Italian-style breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons grated Mozzarella cheese (for stuffing)
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Clean the mushrooms and remove the stems, reserving them for another use.
  3. In a bowl, combine minced clams, green onion, garlic, garlic salt, oregano, melted butter, breadcrumbs, beaten egg, and cheeses until well mixed.
  4. Generously stuff each mushroom cap with the filling.
  5. Arrange stuffed mushrooms in a baking dish and drizzle with melted butter.
  6. Cover with foil and bake for 35-40 minutes.
  7. Remove foil, sprinkle remaining Mozzarella on top, and bake for an additional 5 minutes until melted.
