  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 812 corn tortillas
  • ½ cup white onion (finely chopped)
  • ½ cup fresh cilantro (chopped)
  • Optional: avocado slices, salsa verde

Instructions

  1. Marinate the chicken by mixing lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper in a bowl. Add the chicken and let it marinate for at least 30 minutes.
  2. Preheat your grill or stovetop pan over medium-high heat. Grill the marinated chicken thighs for about 6-7 minutes on each side or until cooked through (internal temperature of 165°F).
  3. Warm the corn tortillas on the grill or in a dry skillet until pliable.
