  • 8 flour tortillas (or 1216 corn tortillas)
  • 1 lb. cooked chicken (chopped/shredded)
  • 1 can (7 oz.) mild green chiles, drained
  • 4 oz. cream cheese
  • 34 cups shredded cheese (Colby Jack & mozzarella blend recommended)
  • Homemade Salsa Verde
  • 1 cup chicken broth
  • Olive oil

Instructions

  1. Prepare the Sauce: If using homemade Salsa Verde, make it first. For store-bought salsa, heat it gently with olive oil and chicken broth in a saucepan.
  2. Mix the Filling: In a large bowl, combine shredded chicken, cream cheese, green chiles, half the shredded cheese, salt, and pepper.
  3. Assemble: Spoon filling into warmed tortillas, roll tightly, and place seam-side down in a greased baking dish.
  4. Add Sauce & Cheese: Pour Salsa Verde over enchiladas and sprinkle remaining cheese on top.
  5. Bake: Cover with foil and bake at 350°F for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly.
