  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder

Instructions

  1. Pat the salmon fillets dry and season both sides with garlic powder, sweet paprika, salt, and pepper.
  2. Heat olive oil and butter in a large nonstick skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic and chopped onion until soft. Stir in thyme and add the orzo, toasting for one minute.
  4. Pour in chicken broth, bring to a boil, then reduce heat to simmer for about 8 minutes until liquid is mostly absorbed.
  5. Add baby spinach, stirring until wilted. Mix in lemon juice and grated Parmesan cheese.
  6. Return the salmon to the skillet and simmer gently for another 2-3 minutes before serving.
