  • 600 g Hokkaido pumpkin flesh
  • 300 g day-old bread
  • 1 onion
  • ½ bunch parsley
  • 2 tbsp pumpkin seeds
  • 1 tbsp butter
  • 2 eggs (size M)
  • Salt and pepper to taste
  • 4 tbsp flour (more if needed)
  • 2 tbsp semolina

Instructions

  1. Prepare the Pumpkin: Cut the Hokkaido pumpkin into 1 cm cubes, boil in salted water for about 10 minutes until tender, then drain.
  2. Prepare Bread and Aromatics: Dice the day-old bread and finely chop onion and parsley. Toast the pumpkin seeds until fragrant.
  3. Mix Ingredients: Combine cooked pumpkin with bread in a bowl. Sauté onions in melted butter until soft; add to the mixture along with eggs, parsley, flour, semolina, salt, and pepper.
  4. Shape Dumplings: Chill dough for about 30 minutes, then shape into about 12 dumplings using wet hands.
  5. Cook Dumplings: Simmer dumplings in salted water for about 10–15 minutes until they float to the top.
  6. Serve: Drain and optionally pan-fry until golden brown. Top with grated Parmesan and chopped toasted seeds before serving.
