  • ½ cup roasted garlic cloves
  • 1 (16.9-ounce) jar prepared Alfredo sauce
  • 1 ¼ pound boneless skinless chicken breasts, chopped into 1-inch pieces
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 4 ounces mushrooms, sliced
  • ½ cup onions, minced
  • 4 cups chicken stock
  • 2 cups half and half
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon red pepper flakes (more to taste)
  • ½ cup grated Parmesan cheese
  • 10 lasagna noodles, broken into 4 pieces each (cooked)
  • 2 tablespoons chopped parsley, for serving

Instructions

  1. Blend the roasted garlic with the Alfredo sauce until smooth. Set aside.
  2. In a large pot over medium-high heat, heat olive oil and sauté chopped chicken seasoned with salt and pepper until golden brown (about 4-6 minutes). Remove from pot.
  3. Melt butter in the same pot; add sliced mushrooms and cook until browned (5-6 minutes).
  4. Add minced onions and cook until translucent (5-6 minutes). Sprinkle flour over onions, stir, then gradually whisk in chicken stock followed by half-and-half.
  5. Stir in the blended garlic mixture along with garlic powder, Italian seasoning, nutmeg, and red pepper flakes; simmer for 10 minutes.
  6. Mix in grated Parmesan cheese, cooked chicken, and parsley. Add cooked lasagna noodles directly to the pot or serve separately.
